Does uninstalling the app delete my account and data?
No. Removing the app from your device does not delete your account, and your data stays on your account so it is there if you reinstall later. An active subscription also continues to bill after an uninstall, because billing is handled by the store rather than by the app being installed. To actually close the account, use the deletion option in Account Settings, and to stop billing, cancel the subscription in your store settings.
